Begin skinning at the end of the ribs (hind flank). Work along the backbone and carefully cut around the ribs. You can either sleeve skin the front legs down to the knee joint or split the skin at the back of the legs. Continue by moving up the neck, disjointing it as close to the head as possible.
DO NOT salt the skin and try and freeze it.
